Ingredients

  • 1 head Cabbage

Dresing

  • 1/2 cup Olive Oil Extra Virgin
  • 1/2 cup Lime juice 2 to 4 Limes
  • 1/4 cup spearmint leaves Stems Trimmed and Minced
  • 2 tbsp honey
  • 1 tbsp Dijon mustard Scant
  • 1/4 tsp sea salt
  • 5 -10 turns black pepper Fresh from Pepper Mill

Instructions

  • Shred cabbage into large bowl.
  • Mix dressing into small bowl.
  • Whisk dressing well.
  • Pour 1/2 to 3/4 of dressing over cabbage.
  • Mix well, be sure the cabbage is completely coated.
  • Refrigerate dressed cabbage 1 hour or up to over night.
  • Refrigerate dressing.
  • Add a bit more dressing to freshen before serving.

Notes

Be careful when using a mandolin.  Always use the guard to shred food.
